What to Cook for Dinner this Week

Hey there. If you’re new to the blog, this is my weekly dinner menu, which outlines six dinners (plus one yummy weekend breakfast idea), intended to help busy folks – like you – with meal planning. I include easy, family-friendly recipes that won’t keep you in the kitchen for hours or leave you with a gigantic mess. Take away one, three, or six meals from this menu – whatever you need. You’ll notice that Friday is takeout night – because we all need at least one night out of the kitchen, right?

Monday: Fish Tacos. These have become a family favorite, and even my girl likes the Cajun-spiced fish. If your littles are sensitive to spice, simple baste their fish in coconut oil alone.

Tuesday: Summer Stew. This recipe is perfect when the sweet corn is at its height. You can use any kind of smoked sausage from chorizo to andouille – whatever you like best.

Wednesday: Smashed Beef Burgers, Oven Fries, Green Bean Salad with Tomatoes and Goat Cheese. If you like Smashburger or Five Guys, you will love this method for homemade burgers with a crisp crust.

Thursday: Gyros. If you feel inclined, you can do your Gyro meat on the grill. Serve with a Greek salad.

Friday: Takeout Night!

Saturday: Salad Pizza. A cool alternative to pizza.

Sunday: Oven-Barbecued Chicken, Go-to Summer Pasta Salad, Corn on the Cob, Watermelon. A perfect summer Sunday dinner!

Weekend Breakfast: Blueberry Boy Bait. This coffee cake-like treat is perfect for when blueberries are in season.
